Blackberry . . .

Yummy,...

*blackberry meals i mean !

like its purple, cream, it's look delicious sooo....


Pastel Vasco with Blackberry Compote and Greek Yoghurt



Cake:

3 1/3 cups All Purpose Flour
1 1/2 Tablespoons of Baking Powder
3/4 teaspoon kosher salt

5 extra large eggs
1 1/2 cups granulated sugar, plus 1 1/2 Tablespoons
2 and 1/2 sticks of butter, melted (oof!)
3 Tablespoons of Dark Rum
1 teaspoon vanilla
1/3 cup fresh orange juice

Blackberry Compote:
2 pints blackberries
2 Tablespoons of lemon juice
2 Tablespoons of water
3 Tablespoons sugar (or to taste)

For the compote:
Place berries in a medium non-reactive saucepan, sprinkle with sugar, and add lemon juice and water. Cook berries over medium heat, until the berries start to soften and break down, but don't completely lose their shape. Scoop out about half the whole berries, and mash the remaining berries in the pan with a potato masher. Place the contents of the pan and the whole berries in a bowl and set aside to cool.

For the cake:
Sift the baking powder and flour together and stir in the salt

Whisk the eggs together in a large bowl, whisk in the sugar, melted butter, rum, extracts and orange juice. Fold in the dry ingredients and let the batter rest in the fridge for thirty minutes.

Preheat the oven to 400, and lightly butter a loaf pan. Pour 3/4 of the batter into the pan and add just over 1 cup of the berries, spreading along the batter. Top with the remaining batter, allowing some of the berries to show through. Bake for about one hour, until a toothpick inserted in the center comes out clean.

To toast the cake, wait until it cools completely, and cut into 3/4 inch slices. Butter lightly on both sides and toast in a cast iron skillet until golden brown. Arrange the slices on a platter, and spoon the remaining compote over the top. Pass a small pitcher of cream or bowl of stirred Greek yoghurt around the table.

A very smooth recipe for an iced chai coffee. The spiciness of chai isn't only for tea, you know. It's a simple blend that won't take you forever to put together. Spice up your coffee today.


Ingredients:
2 tsp cardamom, ground
4 tbs sugar
4 tbs heavy cream
1 tsp almond extract


Preparation:
Use your favorite brewing method to make 4 cups of coffee, mixing the ground cardamom in with the grounds first. Add sugar and almond to the hot coffee, and mix until dissolved. Let cool. Half-fill 4 tall glasses with crushed ice, then fill up with chilled coffee. Add a spoonful of cream to each, just before serving.
Serves 4

Coffee Smoothie Recipe


Here is sweetly delicious smoothie! With a blend of two awesome ingredients..

chocolate and coffee! What can get better then that!

Ingredients:


1 cup of coffee chilled
1 tsp of chocolate syrup
1 banana cut into chunks
1/2 cup of whole milk

Directions:


Blend the milk, coffee and bananas until there is a smoothie texture. Taste to see if it is to your liking, add the chocolate syrup for flavor.

Simple, quick and easy

Iced Cappuccino Recipe


Ingredients

1 tsp. Instant coffee
4 tbs. Heavy cream
1 tsp. Vanilla
4 or 5 Ice cubes
¾ Cup Water
2 tsp. Sugar
Flavoring as desired

Add the instant coffee to the water and mix until blended well. Using a blender put the instant coffee mixture and the remaining ingredients in and blend well. The resulting product should be a smooth, frothy iced cappuccino. If the drink is thicker than desired, add more water and blend. Coffee measurement and flavoring can be adjusted as desired.

Iced Cappuccino from Cold Coffee

Iced cappuccino can be made from coffee that has been brewed and allowed to cool. In order for this to mimic cappuccino the coffee should be brewed stronger than normal.

Ingredients

1 cup very strong coffee, allowed to cool
1 cup cold milk
1 cup ice cubes
Sugar and flavorings as desired

Put all ingredients into a blend and mix until desired consistency. Serve immediately. Whip cream may be added if desired.

Hmm... CupCake O CupCake :9

right,..

i get a little crazy because CupCake,

i like it !!

okey, now i'll share you some my CupCake hunting recipes.

enjoy its delicious :D


Black Forest CupCake


yield: 24 cupcakes


1 recipe Chocolate Cake batter (click for recipe here)
Kirsch
1 can prepared cherry pie filling
1 aerosol can of whipping cream
dark chocolate shavings, sprinkles or any other fun toppings
maraschino cherries

Procedure:


Line 24 muffin tins with jumbo paper liners. Divide batter evenly between the 24 molds. Bake cupcakes at 350 degrees F for approximately 25 minutes, until done. Cool cupcakes on a rack.


Using a serrated knife, cut a cone of cake from the top of each cupcake. Reserve the cupcake cone for later. Sprinkle about 1/2 teaspoon of Kirsch into the cupcake hole and then spoon in about 1 Tablespoon of the cherry pie filling.

In my case, I was able to just fit in 3 whole cherries per cupcake.
Place cupcake top back on top and press slightly to fit.


Refrigerate filled cupcakes until ready to serve. The whipping cream does not sit very well and will quickly melt if left too long before serving.


When you're ready to serve, shake the aerosol can vigorously and turn completely upside down, swirling the foam from outside in on the cupcake tops.


Sprinkle with dark chocolate shavings or whatever fun toppings you desire.
Serve immediately.


Orange Creme Cupcake





Preheat oven to 350 degrees F.

Line a twelve cupcake/muffin pan with paper liners.








In a mixing bowl,

whisk together the dry ingredients:

3/4 cup sorghum flour
3/4 cup potato starch (not potato flour!)
3/4 cup organic cane sugar
1/4 teaspoon sea salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon xanthan gum
2 teaspoons fresh orange zest

Add in:

2 tablespoons light olive oil or vegetable oil
1 tablespoon agave or honey
1 cup fresh squeezed orange juice at room temperature (fresh juice gives the batter a fresh, bright taste)
1 tablespoon Ener-G Egg Replacer whisked with 1/4 cup warm water
2 teaspoons bourbon vanilla

Beat on medium speed for several minutes until the batter is smooth and fluffy.
