Chocolate Panna Cotta

Panna cotta means "cooked cream" in Italian and is a very adaptable recipe; it can be flavored with just about anything. If you want to leave out the cocoa powder from this recipe, you can add some vanilla bean and have vanilla panna cotta. Or add a touch of honey or a little pureed blueberries. You really can flavor it any way you like.

When you cook this, be sure to gently heat the mixture. Do not let it boil. Make sure all the sugar has dissolved before removing it from the heat.

Chocolate Panna Cotta


Makes enough for 6 large panna cottas or 12 small ramekins, with some leftover.

1 1/2 cups whole milk
4 teaspoons unflavored powdered gelatin
4 1/2 cups heavy cream
Good quality cocoa powder, 2 to 4 tablespoons
3/4 cup sugar
Pinch of salt
Chocolate and white chocolate bars, for garnish

Put the milk in a medium saucepan and sprinkle the gelatin over the milk. Let it stand for about 5 minutes to soften. Turn heat to medium and stir milk just until the gelatin dissolves.

Add the cream, sugar and salt. Whisk in the cocoa powder until you get the amount of chocolate you like. Whisk over low heat until the sugar completely dissolves, just a few minutes.

Remove from the heat and let cool completely. (ihavenet.com pour the mixture into a 6-cup Pyrex to cool.) Stir mixture frequently during cooling to prevent skin from forming. Pour the cream mixture into 6 martini glasses or into a dozen small ramekins.

Cover and refrigerate. Chill until set.

With a vegetable peeler, shave small chocolate curls from each of the chocolate bars onto the panna cotta.

Can be made the day before.

Buttermilk-Blueberry Breakfast Cake


Serves 6-8

½ cup unsalted butter, room temperature
2 tsp. lemon zest or more — zest from 1 large lemon
7/8 cup + 1 tablespoon sugar
1 egg, room temperature
1 tsp. vanilla
2 cups flour
2 tsp. baking powder
1 tsp. kosher salt
2 cups fresh blueberries
½ cup buttermilk

1. Preheat the oven to 350ºF. Cream butter with lemon zest and 7/8 cup of the sugar until light and fluffy.

2. Add the egg and vanilla and beat until combined. Meanwhile, toss the blueberries with ¼ cup of flour, then whisk together the remaining flour, baking powder and salt.

3. Add the flour mixture to the batter a little at a time, alternating with the buttermilk. Fold in the blueberries.

4. Grease a 9-inch square baking pan (or something similar) with butter or coat with non-stick spray. Spread batter into pan. Sprinkle batter with remaining tablespoon of sugar. Bake for 35 minutes. Check with a toothpick for doneness. If necessary, return pan to oven for a couple of more minutes. (Note: Baking for as long as 10 minutes more might be necessary.) Let cool at least 15 minutes before serving.

Macaroon Kiss Cookies


2 1/2 cups All purpose flour
1 Tablespoon plus 1 teaspoon baking powder
1/2 teaspoon table salt
2/3 cups butter, softened
6 oz. cream cheese, softened
1 1/2 cups granulated sugar
2 egg yolks
1 Tablespoon plus 1 teaspoon Vanilla extract
1 Tablespoon plus 1 teaspoon juice from a fresh orange
10 cups sweetened flaked coconut, divided in to 6 cup and 4 cup portions
1 bag Hershey Kisses (48 pieces)

Step 1:  In a medium bowl, sift flour, baking powder and salt.  Set aside.

Step 2:  In the bowl of an electric mixer, beat the butter, cream cheese, and sugar until light and fluffy.  Add egg yolks, vanilla and orange juice and beat till smooth. 

Step 3:  In 1 cup increments, mix flour in to the butter mixture.  Add the 6 cups flaked coconut and beat to combine.

Step 4:  Refrigerate dough for 1 hour. While dough is chilling, remove wrappers from the Kisses.

Step 5:  Preheat oven to 350.  One at a time, scoop dough into 1" balls, then roll in the bowl of remaining coconut (4 cups).  Arrange on an ungreased baking sheet, at least an inch apart (cookies will spread slightly).  A standard cookie sheet should accommodate a dozen cookies at a time.  Bake 12 minutes, until the cookies puff and are very lightly browned. 

Step 6:  Remove from oven.  Immediately press one Kiss into each cookie.  Return pan to oven and bake for an additional minute.

Step 7:  Remove pan from oven and cool on a rack for 10 minutes.  With a thin spatula, gently move cookies on to a rack to finish cooling.

Raspberry Almond Thumbprints Cookie


Ingredients:
2 cups butter, softened
1 1/3 cup sugar
1 teaspoon salt
2 teaspoons almond extract
4 cups flour
1 cup ground (or finely chopped) almonds
1 cup raspberry freezer jam

Directions:
Preheat the oven to 325ºF.  In a large mixer bowl, cream together the butter and sugar until fluffy.

Beat in the salt, and almond extract until smooth.  Mix in the flour until combined, and then the almonds.  The dough will be very...  clean.  It's hard to describe, but you will know what I mean when you get there. 

Scoop out small balls of dough onto a parchment-lined baking sheet.  Press a hole into the center of each cookie, not all the way through.

Fill each hole with raspberry jam or freezer jam as full as they will go, actually kind of mounded into the hole because it will settle as the cookies spread.

 Bake for 20-25 minutes until the cookies are light golden brown around the edges.

Cool completely as the jam will set up as the cookies cool.  Store in tupperware at room temperature for a few days or in the freezer for longer!

Fried Bocconcini with Spicy Tomato Sauce

Fried Bocconcini with Spicy Tomato Sauce



Servings: approximately 20  (I halved this recipe, but I am listing the full one here-it would be enough for a large group)


Ingredients

For the sauce:



1/2 cup extra-virgin olive oil
2 garlic cloves, minced
1 tsp. red pepper flakes
1 can (28 oz.) crushed tomatoes, juice reserved
Salt and pepper, to taste
For the fried mozzarella:
3-4 cups peanut oil, depending on type of pan you will be frying the cheese in
1 teaspoon salt, plus more to taste
2 tablespoons grated Parmesan
2 lb. mozzarella bocconcini (about 50 pieces)
4 eggs
1/2 cup milk
2 cups all-purpose flour
4 cups panko
Special equipment:  Deep-frying thermometer


Instructions


1. For the sauce: In a saucepan over medium heat, warm the 1/2 cup olive oil.

2. Add the garlic and red pepper flakes and cook, stirring, until the garlic is soft but not browned, about 1 minute.

3. Add the tomatoes and their juices and simmer until the sauce is thickened, about 6 minutes. Season with salt and black pepper. Set aside.


4. Preheat an oven to 200°F.


5. For the fried mozzarella: Drain the cheese from its liquid. Place the cheese on a paper towel-lined baking sheet and pat dry.


6. If your cheese balls seem pretty big, halve or quarter them into bite-size pieces.  Once they get the panko breading on them, they will be a lot bigger.


7.In a bowl, whisk together the eggs and milk.


8. Put the egg mixture and bread crumbs in separate wide, shallow bowls.  Combine the panko with the teaspoon of salt and Parmesan in another wide, shallow bowl.  (*If you only have one shallow bowl, use it for the panko.  It will help you immensely with the breading process.)


9. Roll the cheese in the flour, dip into the egg mixture and coat with the bread crumbs, shaking off the excess after each step.


10.  Repeat the breading process one more time for each cheese piece.


11. In a large, deep sauté pan over medium-high heat, pour the oil to a depth of 3 inches and heat to 350°F on a deep-frying thermometer.


12. Working in batches, fry the cheese until golden, about 45 seconds (or until golden brown-watch them carefully as oven temperatures may vary). If you notice that your thermometer’s reading decreases, wait for a little while until the oil gets back up to the proper temperature.


13. Transfer the fried cheese to a paper towel-lined plate and season with salt and black pepper. Place the cheese on a wire rack set over a baking sheet and keep warm in the oven while frying the remaining cheese.


14.  Serve with the warm tomato sauce.

Spanish Baked Bananas (Platanos Al Forno)




Basic ingredients

- 4 bananas
- grated rind and juice of 1 orange
- 3 tablespoon brown sugar
- 2 tablespoon butter
- 50  g Yoghurt or ice-cream

Steps

1.Peel the bananas from top to the end.
2.Cut the bananas and put on the oven dish.
3.pour the orange juice on top of the bananas.
4.Add the brown sugar over the bananas.
5.Grate some skin of an orange and add on top of the bananas.
6.Add the butter on top of the bananas.
7.Cover the oven dish with foil.
8.Bake in the oven at 180′ c for 15 mins.
9.serve warm with the ice-cream or yoghurt.

Serabi Notosuman


Bahan :
500 gram tepung beras
250 gram gula pasir dibikin jadi gula cair
1 butir kelapa parut dibikin jadi santan kental
600 cc air
Soda kue
Minyak goreng buat menggoreng (bubuhkan ke pancinya dengan kain yang diikat membentuk gumpalan)
Air pandan, kuning telur, coklat mesyes buat selera

Catatan: Perbandingan gula: tepung harus 1:2

Cara membuatnya: Tepung beras dituangi air sedikit demi sedikit sambil diaduk agar rata membentuk adonan cairan yang kental. Masukkan gula putih cair ke dalam adonan, bubuhkan sedikit soda kue. Siapkan santan yang sudah dimasak matang. Siapkan wajan di atas api arang atau api gas yang kecil, tuangi sesendok sayur adonan (tepung dan gula) lalu ratakan. Setelah adonan setengah matang, tuangkan santan kental sesendok sayur lalu tutup wajannya dengan penutup dari keramik. Kalau suka bisa ditambahkan air pandan atau coklat atau kuning telur. Bila tepi serabi berwarna coklat itu adalah tanda serabi sudah matang.
 
Pesan dari pembuatnya: Api untuk memasak serabi jangan besar, kalau bisa kira-kira sepanas api arang. Wajan serabi tidak boleh terkena air agar tidak lengket. Wajan hanya boleh dibersihkan dengan minyak goreng saja. Tutupnya dari keramik karena keramik bisa menyerap uap air agar tidak jatuh ke serabi saat dimasak. Tutupnya ini boleh dicuci dengan air. Pembakaran serabi dilakukan dengan alat bakar tradisional terbuat dari tanah liat, yang menggunakan arang. Dengan alat ini, hasilnya maksimal. Kalaumempergunakan gas sebagai pembakar, tetapi serabi tidak mengembang dan tidak menghasilkan serat.

8 of the World’s Healthiest Spices & Herbs You Should Be Eating

As a registered dietitian and associate nutrition editor at EatingWell Magazine, I know that herbs and spices do more than simply add flavor to food. They let you cut down on some less-healthy ingredients, such as salt, added sugars and saturated fat, and some have inherent health benefits, many of which Joyce Hendley reported on for EatingWell Magazine.

Modern science is beginning to uncover the ultimate power of spices and herbs, as weapons against illnesses from cancer to Alzheimer's disease. "We're now starting to see a scientific basis for why people have been using spices medicinally for thousands of years," says Bharat Aggarwal, Ph.D., professor at the University of Texas M.D. Anderson Cancer Center in Houston and author of Healing Spices (Sterling, 2011). 

Aggarwal notes that in his native India, where spices tend to be used by the handful, incidence of diet-related diseases like heart disease and cancer have long been low. But when Indians move away and adopt more Westernized eating patterns, their rates of those diseases rise. While researchers usually blame the meatier, fattier nature of Western diets, Aggarwal and other experts believe that herbs and spices-or more precisely, the lack of them-are also an important piece of the dietary puzzle. "When Indians eat more Westernized foods, they're getting much fewer spices than their traditional diet contains," he explains. "They lose the protection those spices are conveying." 

While science has yet to show that any spice cures disease, there's compelling evidence that several may help manage some chronic conditions (though it's always smart to talk with your doctor). What's not to love? Here we've gathered eight of the healthiest spices and herbs enjoyed around the world. 

Chile Peppers
May help: Boost metabolism.

Chile peppers add a much-appreciated heat to chilly-weather dishes, and they can also give a boost to your metabolism. Thank capsaicin, the compound that gives fresh chiles, and spices including cayenne and chipotle, their kick. Studies show that capsaicin can increase the body's metabolic rate (causing one to burn more calories) and may stimulate brain chemicals that help us feel less hungry. In fact, one study found that people ate 16 percent fewer calories at a meal if they'd sipped a hot-pepper-spiked tomato juice (vs. plain tomato juice) half an hour earlier. Recent research found that capsinoids, similar but gentler chemicals found in milder chile hybrids, have the same effects-so even tamer sweet paprika packs a healthy punch. Capsaicin may also lower risk of ulcers by boosting the ability of stomach cells to resist infection by ulcer-causing bacteria and help the heart by keeping "bad" LDL cholesterol from turning into a more lethal, artery-clogging form.

Ginger
May help: Soothe an upset stomach, fight arthritis pain.

Ginger has a well-deserved reputation for relieving an unsettled stomach. Studies show ginger extracts can help reduce nausea caused by morning sickness or following surgery or chemotherapy, though it's less effective for motion sickness. But ginger is also packed with inflammation-fighting compounds, such as gingerols, which some experts believe may hold promise in fighting some cancers and may reduce the aches of osteoarthritis and soothe sore muscles. In a recent study, people who took ginger capsules daily for 11 days reported 25 percent less muscle pain when they performed exercises designed to strain their muscles (compared with a similar group taking placebo capsules). Another study found that ginger-extract injections helped relieve osteoarthritis pain of the knee.

Cinnamon
May help: Stabilize blood sugar.

A few studies suggest that adding cinnamon to food-up to a teaspoon a day, usually given in capsule form-might help people with type 2 diabetes better control their blood sugar, by lowering post-meal blood-sugar spikes. Other studies suggest the effects are limited at best.

Turmeric
May help: Quell inflammation, inhibit tumors.

Turmeric, the goldenrod-colored spice, is used in India to help wounds heal (it's applied as a paste); it's also made into a tea to relieve colds and respiratory problems. Modern medicine confirms some solid-gold health benefits as well; most are associated with curcumin, a compound in turmeric that has potent antioxidant and anti-inflammatory properties. Curcumin has been shown to help relieve pain of arthritis, injuries and dental procedures; it's also being studied for its potential in managing heart disease, diabetes and Alzheimer's disease. Researcher Bharat Aggarwal is bullish on curcumin's potential as a cancer treatment, particularly in colon, prostate and breast cancers; preliminary studies have found that curcumin can inhibit tumor cell growth and suppress enzymes that activate carcinogens.

Saffron
May help: Lift your mood.

Saffron has long been used in traditional Persian medicine as a mood lifter, usually steeped into a medicinal tea or used to prepare rice. Research from Iran's Roozbeh Psychiatric Hospital at Tehran University of Medical Sciences has found that saffron may help to relieve symptoms of premenstrual syndrome (PMS) and depression. In one study, 75% of women with PMS who were given saffron capsules daily reported that their PMS symptoms (such as mood swings and depression) declined by at least half, compared with only 8 percent of women who didn't take saffron.

Parsley
May help: Inhibit breast cancer-cell growth.

University of Missouri scientists found that this herb can actually inhibit breast cancer-cell growth, reported Holly Pevzner in the September/October 2011 issue of EatingWell Magazine. In the study, animals that were given apigenin, a compound abundant in parsley (and in celery), boosted their resistance to developing cancerous tumors. Experts recommend adding a couple pinches of minced fresh parsley to your dishes daily.

Sage
May help: Preserve memory, soothe sore throats.

Herbalists recommend sipping sage tea for upset stomachs and sore throats, a remedy supported by one study that found spraying sore throats with a sage solution gave effective pain relief. And preliminary research suggests the herb may improve some symptoms of early Alzheimer's disease by preventing a key enzyme from destroying acetylcholine, a brain chemical involved in memory and learning. In another study, college students who took sage extracts in capsule form performed significantly better on memory tests, and their moods improved.

Rosemary
May help: Enhance mental focus, fight foodborne bacteria.

One recent study found that people performed better on memory and alertness tests when mists of aromatic rosemary oil were piped into their study cubicles. Rosemary is often used in marinades for meats and poultry, and there's scientific wisdom behind that tradition: rosmarinic acid and other antioxidant compounds in the herb fight bacteria and prevent meat from spoiling, and may even make cooked meats healthier. In March 2010, Kansas State University researchers reported that adding rosemary extracts to ground beef helped prevent the formation of heterocyclic amines (HCAs)-cancer-causing compounds produced when meats are grilled, broiled or fried.

Bahan :
▪300 gr daging cincang halus
▪75 gr sagu cap sagu tani
▪1 buah telur ayam
▪1 bt daun bawang iris halus
▪2 siung bwg putih haluskan
▪1 sdm bawang goreng
▪1 sdm minyak goreng
▪ garam – gula – merica secukupnya
▪ tahu putih, potong kotak atau segitiga is your choice..

Cara membuat: 
Campur semua bahan di food processor atau diuleni dengan tangan hingga tercampur rata. Lubangi tahu ditengah, kemudian isi dengan daging yang sudah dihaluskan. Kukus sampai matang

Kuah Baso: 
1 buah dengkul sapi dimasak dengan api kecil (bisa diganti kali yaa, hehe :D
Biarkan diapi kecil tambahkan garam – gula – merica.

Baham Pelengkap: 
daun sawi hijau/pakcoy
bawang goreng – daun bawang – tongcay
sambal rawit

Bolu Kapas Jagung Lembut



Bahan-Bahan:

6 kuning telur
75 gram gula pasir
1/2 sendok makan sp
90 gram tepung terigu protein rendah
50 gram jagung pipil, dihaluskan
6 putih telur
50 gram gula pasir
1/4 sendok teh garam
25 gram margarin, dilelehkan
25 ml susu cair

Cara Pengolahan:
* Kocok kuning telur, gula, dan SP sampai mengembang. Tambahkan tepung terigu sambil diayak dan diaduk rata. Masukkan jagung. Aduk rata. Sisihkan.
  
* Kocok putih telur dan garam sampai setengah mengembang. Tambahkan gula sambil dikocok sampai mengembang.
  
* Masukkan margarin leleh dan susu cair sedikit demi sedikit di campuran tepung sambil diaduk perlahan. Tambahkan putih telur kocok. Aduk perlahan.
  
* Tuang ke loyang bulat pendek diameter 9 cm yang dioles margarin.
  
* Oven 20 menit dengan suhu 190 derajat Celsius. :)

Tahu Juga Bisa Jadi Cup Cake



bahan-bahan:
3 butir telur
1 sendok teh emulsifier
100 gram gula pasir
75 gram tepung terigu protein sedang
25 gram cokelat bubuk
1/2 sendok teh baking powder
25 ml susu kedelai
50 gram tahu sutera, dihaluskan
50 gram margarin, dilelehkan
1/4 sendok teh cokelat pasta

Cara Pengolahan : 
Kocok telur, emulsifier, dan gula sampai mengembang.
Masukkan tepung terigu, cokelat bubuk, dan baking powder sambil diayak dan diaduk rata.
Masukkan susu kedelai, tahu sutera, margarin leleh, dan cokelat pasta sambil diaduk perlahan.
Tuang ke cetakan kecil yang dialas cup kertas.
Oven 15 menit dengan suhu 180 derajat Celsius sampai matang.

Lamb Briyani


Ingredients

500g lamb meat, chopped in chunks
1 onion, sliced
2 inches ginger, sliced
4 cloves garlic, minced
3 cups rice
1/2 cup ghee
1 packet briyani spices (if you don’t have it use- 1 tsp coriander powder, 1 tsp cumin powder, a cinnamon stick and 2 cardamom pods)
A little bit of saffron (optional)
31/2 cups chicken stock
Salt to taste
1 pandanus leaf
Coriander leaves
Mint leaves

Method

Fry garlic, onion and ginger in the ghee until fragrant.

Add the briyani spices and saffron, stirring it a little so that it’ll infuse the ghee.

Stir in lamb and fry it until it’s half-cooked.

Add in the rest of the ingredients and cook for about 5 minutes.

Turn down fire to a low simmer and let it cook for about 25 minutes until the rice is fluffy.

Scatter some almond flakes, fried shallots, sultanas, mint and serve.

D.I.Y Dhal


Ingredients

350g dhal
3 cups water
1/2 tsp cumin powder
1/2 tsp coriander powder
2 cloves of garlic
1 inch ginger
1 tsp turmeric powder,
2 dried chillies
salt to taste

Method

Let this simmer for 45 minutes until the dhal breaks down and becomes thick.

Before serving, fry 2 tsps ghee/ butter, 1 meduim onion (diced), 3 cardamom pods, 2 sticks of cinnamon, 1/2 tsp mustard seeds until fragrant- then mixed it with the dhal.

Eat it with rice or warm chapati.
