3 eggs (70g), separated

1 tbs plain flour

1 cup cornflour

3/4 cup caster sugar

1 tsp cream of tartar

1/2 tsp bicarbonate of soda

300ml cream, whipped

Pinch of salt

Preheat oven to 190C. Line a biscuit tray with baking paper and then lightly spray with canola oil.

Sift cornflour, flour, cream of tartar and bicarbonate of soda together three times. Using an electric mixer, beat egg whites and salt in a large bowl until stiff peaks form. Gradually add caster sugar while beating until mixture is thick and glossy and sugar is dissolved. Add egg yolks and beat until just mixed. Gradually sprinkle over flour mixture and lightly fold using a large metal spoon.

Put teaspoon-sized dollops of the mixture on the biscuit tray, allowing room for spreading. Bake for about 10min, until a light golden colour. Once cool, join together with whipped cream and dust with icing sugar two hours before serving. sThe biscuits will soften into a lovely soft sponge cake as light as a kiss :DD
